Baked Macaroni and Cheese - Take 2

I mentioned that I made Baked Macaroni and Cheese in an an earlier post. I came back to say that I didn't eat the whole pan so I froze about two servings. I defrosted earlier this week and brought the leftovers to work today for lunch. The macaroni and cheese is perfect even after refrigeration, freezing, thawing and microwaving! The top breading isn't as crunchy, but it's only really crunchy that first time you eat it anyway and it's not plentiful enough to get soggy. So yummy! Knowing it freezes so well, I may make it more often.

Yay! That makes me very happy. I'm going to make some over the long weekend. I may add chicken to it. :)
