February was a long month. The first weekend, Little Miss and I went to Williams Sonona to make and decorate Valentine's Day cookies. It was a private class! We got the cute little conversation heart cookie cutter set.
The second weekend, we went back to Williams Sonoma to make some orange chicken which was just a jar of sauce and chicken in the air fryer. It was so good (see other post). The next day, we went back to make salted caramel pretzel cheesecake and chocolate molten cake. They were so delicious and so easy to make! It's in the Instant Pot, takes no time at all, and we got to take the cookbook home.=
The third weekend, we went to the Parents' winter vacation house and met up with family. We celebrated Mom's birthday a little early. I played beer pong for charity. Poorly. Sister and Brother-in-Law won the tournament, Cousin won pint glasses, and I won the 50/50 cash raffle and a shirt. Great time all around! We also think Captain has his first crush on my youngest Cousin's girlfriend (above).
The last weekend was relatively quiet. We ran a lot of errands. Little Miss scored her third goal in four weeks at hockey and is in the playoffs. Captain got new sneakers. It was not earth-shattering.
Full disclosure: we made this recipe before as a cakelet and loaf. It's a really good vanilla cake. We wanted to see how it was with a fruit filling and buttercream, a more traditional cake. We tweaked and made it for Mom's birthday.
3 cups cake flour (To make cake flour, replace 2 tbsp of flour with cornstarch per cup. So, for this recipe, add all the flour to a bowl, remove 6 tbsp and then add 6 tbsp of cornstarch. Whisk well to combine.)
Heat oven to 325. Grease and flour three or four 8 or 9 inch round cake pans and line the bottoms with a round of parchment paper that is also slathered with a bit of butter or shortening.
Separate the 4 whole eggs, placing the 4 yolks in a small bowl and the whites in a separate medium size bowl. Add the 3 additional egg whites to the other 4 for a total of 7 egg whites. Using an electric mixer, beat the egg whites until frothy. (*See note.) Slowly pour in 1/4 cup of the sugar, beating as you pour. Continue to beat until the meringue is glossy and stiff peaks form when you lift the whisk from the beaten egg whites. Set aside.
Fit the standing mixer with the paddle attachment and cream the butter, shortening and remaining 2 cups of sugar until light and fluffy, about 5 minutes. Stop the mixer to scrape down the sides of the bowl a time or two. Beat in the vanilla and lemon extracts.
Add 2 of the egg yolks and beat until incorporated, about 20 seconds. Scrape down the sides of the bowl. Add the remaining 2 egg yolks, beat for about 20 seconds, until fully incorporated. Scrape down the sides of the bowl.
Add the flour, baking powder, salt and nutmeg to a large bowl and mix with a wire whisk just to combine.
Beating on low speed, add the flour mixture, alternating with the buttermilk, in 3 additions, beginning and ending with the flour: 1/3 of the flour, 1/2 of the buttermilk, 1/3 of the flour, 1/2 of the buttermilk, 1/3 of the flour. With each addition, beat on low speed, just long enough to incorporate. Scrape down the sides of the bowl as necessary.
With a rubber spatula, gently fold the beaten egg whites into the batter just until distributed. You should still see some streaks of egg white throughout the batter. Do not over mix.
Divide the batter evenly between the prepared pans. If baking 3 layers, bake for 40-50 min. If baking four layers, bake for 30-35 minutes. When done, the cakes will be golden brown and pulling away from the sides of the pan. To check for doneness, stick a toothpick into the center of one of the layers. Remove the toothpick and look for signs of raw batter. If only cake crumbs stick to the toothpick, the cake is done. You can also scoop a tiny amount of cake from the center of one of the layers to check for doneness. (You’ll be covering the cake with frosting anyway.)
Let the cakes cool on wire racks for 5 minutes in the pan, then gently turn them out of the pans onto the wire racks to cool completely. If you don’t plan on frosting the layers immediately, wrap each tightly with plastic wrap. The layers can be stored at room temperature for 1 day, or frozen for up to 2 months.

In the bowl of an electric mixer, add butter. Beat butter on medium speed with the whisk attachment for about 1 minute, until butter is smooth.
Add 1 cup of powdered sugar, and beat until combined. Repeat with 1 more cup.
Add bakery emulsion and heavy whipping cream and beat until combined.
Add the remaining powdered sugar, one cup at a time, beating until combined after each addition.
Beat for about one additional minute, until frosting is thickened, smooth, and fluffy.
The frosting should be smooth and fluffy, but stiff enough to hold its shape. If it's too stiff, add more whipping cream, half a tablespoon at a time, until you achieve the desired texture (2-3 tablespoons total).
For time, I just added Smuckers jelly as the filling (and not enough), but if you go full fruit preserves and liberally apply, I think it would be tasty. This recipe makes a decent amount of cake. I made 3 square layers. That said, the buttercream did not make enough to cover the entire cake so I added the strawberries along the bottom to cover it up best I could.
So, the points are below. Little Miss gave it a 6 because she doesn't like jelly. I gave it an 8. The average is 7 points.

January was a fun month. In the beginning of the month, we celebrated a belated holiday with the In-Laws. We had dinner out and then went back to our apartment for dessert and presents. I can't even handle the cuteness of all the kids together.
The very next day, Captain and I took the Metro to The Kennedy Center to see the play Don't Let the Pigeon Drive the Bus. He used to be scared of the Metro and is no longer! Because I'm an idiot, I bought 4 tickets to the play because I can't work the Internet. So, I gave two of the tickets to Sister-in-Law and Nephew. We met in between the two performances for lunch. After lunch, Captain and I did the fun virtual tour of The Kennedy Center with Pigeon on the app. The wifi was a little spotty so we didn't complete it, but we did get a pin and had a lot of fun.
The next weekend, Husband was out of town on an annual trip. So, the kids and I did some cooking and baking and had a movie night (101 Dalmations, the original animated film). We did dinner out with the In-Laws. It was a lot of fun.
The next weekend, Little Miss had a Latin party which is a total thing. She won second place in a costume contest. I went to a Housewarming party and a couple of happy hours. Overall, it was a pretty relaxing long weekend. Our Sunday Family Movie was Star Wars (A New Hope). I did not fall asleep once through this viewing, too.
The last weekend, the kids and I went back to The Kennedy Center for Lunar New Year (China). I think I'm going to have to skip Korea this weekend. I just need to do some things at home. The lanterns were beautiful, and the kids had a blast with crafts and costumes. We also completed the Virtual Tour and got certificates of completion! And then everybody melted down, and we came home. Food front: I bought myself an Air Fryer for Christmas so we used that quite a bit. In January, we air fried everything from veggies (butternut squash and broccoli and brussels sprouts) to pot stickers, chicken tenders and onion rings. The kids and I made chocolate donuts in the oven, homemade baked mac and cheese, parmesan chicken tenders, chicken romano and lemon pasta, broccoli cheese soup, champagne cupcakes with champagne buttercream, the yummiest vanilla cake, and circus cupcakes. March was busy! The first weekend was hockey - super early. Then, later that day, we had Sister's bridal shower and bachelorette party #1. The shower was a lot of fun - presents, good food, mimosas! That night, the girls all went out at Reston Town Center and drank and danced. We shut the place down. Sunday was a sleepy day - literally.
The next weekend, Husband took Little Miss to hockey while I stayed home with Captain. After, I got a pedicure with a friend before book club. On Sunday, Little Miss had her swimming lesson. It's always great to hang out with friends. Plus, I can't remember the last time I had a pedicure so that was heavenly. The third week of March, we hung out with Brother-in-Law and Sister-in-Law. It was the beginning of Spring Break. We had corned beef and cabbage. The kids played. It was relaxing, and we got home at a decent hour. It's so nice to see the cousins growing up together and playing well with each other. On Monday, Husband brought Little Miss to NYC to watch the Rangers play during her Spring Break. Captain and I stayed home together, and we traded selfies.
The last weekend was Easter. We saw Zootopia on Saturday and went to Sister's house for Easter brunch. We had a ton of Korean food which was delicious. The kids had Easter Egg hunts. Captain missed his naps so he was super cranky, but he loved finding eggs and playing with the dog. He peed right through his little outfit right after we got there, but that's life with a toddler for you.
This year has been flying! The first weekend in Februray, Little Miss had hockey and swimming on Saturday and Sunday. The second weekend, we went to my parents' mountain house. It was frigid cold. Sister, Brother-in-Law, and we went on a double date for Valentine's Day. It's our annual date night. The next day, we went ice skating and to the pool. I had not been ice skating in a very long time. It was evident the minute I got on the ice. We planned to stay until Monday, but a bad snow storm was coming so we all drove home after dinner on Sunday.
The third weekend, Little Miss had hockey and swimming again, but on Sunday, I met a friend for a Sangria and Paella-making class. It was a lot of fun and full of food and sangria. I had a lot of sangria. I was also so full that I didn't even eat dinner that night. I'm looking forward to trying to make some!
The last weekend in February, Little Miss had hockey which now starts at 7AM which is rough on us all (though I stayed home with Captain so it wasn't as bad for me). Then, we hosted a playdate in the afternoon. Little Miss had a lot of fun with her friend. We baked brownies for the boys and then went to the game room for some pool, ping pong, and Golden Tee. On Sunday, it was the Oscars and swimming. Little Miss got all ready so she could watch the pretty dresses and the first awards. (The selfie on this post is from when we all watched the Grammys. Captain slept through the Oscars so no family selfie for that). I had a gift card so we did take out instead of our usual "cook way too much food" for Oscar Sunday.
December, as always was a busy month! The first week of December, I saw Tom Brokaw speak which was great. He's such a great speaker, so impartial and just so humble and gracious. He's been through and has seen so much.
That first Friday, I took Little Miss out of school to go see ICE at the National Harbor. It was a blast. We rode the Capital Wheel and had dinner and did a little shopping. It was a lot of fun with my big girl. The next day, we were up early to choose our Christmas tree. Then, I went to Frederick, MD to tour some old houses with book club. It was a lot of fun.
The second weekend, I met my sister in Reston to celebrate her birthday. It was fun complete with tacos and margaritas. On Saturday, Little Miss had a birthday party while Captain and I grabbed some Japanese food. Then, we went to brother-in-law's to celebrate Hanukkah. It was a lot of fun to catch up with him. Plus, the kids love him, his wife, his father, and his dog. On Sunday, I brought the kids to meet Santa. Captain, who cries in most pictures, did not cry on Santa's lap. I guess that's good.
The third weekend, Little Miss and Captain spent the night with the in-laws while Husband and I made hundreds of pierogi. They came out very well if I do say so myself. That was pretty much the entire weekend.
We went to church on Christmas Eve. Captain had some issues with sitting that long, but he was quiet. I only had to remove him for the very end. Little Miss was more bored than he was, but she made it through. After, we had the in-laws, brother-in-law, sister-in-law and the nephews over for dinner. We feasted on pierogis and Polish foods and desserts.
On Christmas, Little Miss literally received everything she asked Santa for. Santa thanks Amazon Prime for all those deliveries. Husband received some nice surprises as did I. I mostly just needed a new iPod which I received. Captain got a few books and cars and trains - all the hits.
The day after Christmas, we drove to Maryland to be with my family. It was mild, rainy weather so it was all inside activities. We played board games, watched movies, opened more presents. The kids went ice skating and went to the inside pool. It was fun. Captain started to have some issues sleeping, but he was a trooper.
We left on Tuesday after Christmas. I took the week between Christmas and New Year's off which I rarely do. I haven't had that much time off ever. Because the rain broke up, we went to Zoolights. It was fun though it's unfortunate we didn't have more time there. The lines were long and crazy. Captain was not a fan of the carousel. He does not like rides as much as Little Miss.
New Year's Eve, the kids spent at the in-laws as we had plans! We went to a friend's house. We played board games - where Husband and I showed our amazing team work skills at Trivia Pursuit - and had some beverages while we ate and watched football. It was a decent year in 2015. I have high hopes for 2016!
My resolution for 2016 is to be better at this whole blogging thing. I've let it slide. Though I think the monthly update posts are better suited for me, I can still be better about posting. I'm much better at keeping up Instagram honestly. I mean, annually, my resolution is to try to just simply say "thank you" when complimented. I feel I try to downplay or rationalize every kind word people say instead of just giving thanks. I'm still horrible at it, but I'm trying.
We've been busy just like every single other family during the holiday season, but here's a quick update. We managed to put up a tree and decorate it. We purchased presents for everyone (and then purchased a few more). We did cooking and baking. Captain is teething and getting those wretched canine teeth in. It's resulting in either a cold or congestion. He is also badly constipated this week so the combination is rough. He hasn't slept and has been an emotional mess. Last night was better than nights before so I think there is a light at the end of the tunnel. His vocabulary is finally increasing. He can say mama, dada, baba (for drink), his sister's name, bus, car, ball, girl, and now he says cracker, thanks, and good. He's slow to talk but so was Little Miss. Because of the age difference, it's like having a first child all over again. He doesn't have to talk because there's no need to - he has 3 people catering to his every need. Little Miss is wise beyond her years. She enjoys mindless YouTube videos and reading Harry Potter with me. She's doing extraordinary in school. She hasn't mastered third grade level work yet, but she's never gives up. She's well above her grade level in both math and language arts. She speaks Spanish and sign language at home. She's learning coding on her school iPad. She knows pretty much what I knew in middle school. She's incredibly helpful around the house. If anything, her only fault is not being a good eater, but she eats. Status quo with Husband. He freelances from home. I, however, got promoted this year which is exciting. I love where I work, and it's nice to receive encouragement back. Here's to a happy and healthy 2016!
The first Sunday in November was spent at a first birthday party! They're always fun. Captain even managed to nap there. Little Miss loved being the oldest one there. After Little Miss was going to have a sleepover with her cousins. We stayed at the birthday party a little longer. Husband, Captain, and I had dinner in the city before heading home. Little Miss called on our way home and said she did not want to have a sleepover so we swung by and picked her up.
The next day, Husband's family watched the Jets game and ate way too much food. All the kids had a really great time together. The younger ones are not too happy with being younger and not allowed to do what the big kids get to do. Captain spent the entire day eating. And then he ate some more. It was a good napping weekend for him. He did a great job napping in other people's cribs. Usually, on the weekend, he does his best to avoid naps.
The second weekend of November, Husband and I belatedly celebrated our anniversary. We went to Clyde's and to a basketball game (Wizards/Magic). It was a fun, relaxing night out. The Wizards won - though we weren't very invested in the game. It was nice to get out and have some couple time. The kids slept over the In-Laws' apartment so we also got to sleep late which was as nice as you'd think. The next day, we did Christmas photos with the cousins. We got one really good one, and we only marginally held onto our sanity.
The third weekend of November, we finished cleaning our apartment for Thanksgiving. I can't say we ever really finished, but it's better than it was. I bagged toys and clothes for donation. Things were really tidied up - except our bedroom, but no one really goes in there anyway. That Sunday, my sister and I had photos with the other side of the family. I mixed up the times, but the photo studio was so backed up, no one noticed. My parents met us for lunch, and then we head home to call another weekend to an end.
Thanksgiving week was a lot of fun. The night before, I got a massage when my office closed early. Captain had his 18 month well child visit. He weighs 21.5 pounds, finally weighing over 20 pounds! He's pretty healthy and doing well. He got his flu shot. He still doesn't say many words, but this was typical of Little Miss, too. He makes sounds and says Mama, Dada, Baba when he wants his cup. He's been known to say Little Miss's name. He also says ball, doggie, girl, tree, and other words. I think he said cookie recently. He's a big fan of cookies.
On Thanksgiving, we got up and stayed in our jammies for awhile. We watched the parade. Husband made the turkey and prepped the stuffing. Once those were done, I made roasted veggies (butternut squash, potatoes, brussels sprouts, and red onion). It was a simple meal, but it was pretty good. We had cookies for dessert. My parents enjoyed hanging out with the kids. Captain ate early and then napped when we ate which worked out best. During the weekend, we did as little as possible. I took Little Miss skating. Then, Little Miss and I went to see a movie the next day. My friend and I went to see another movie on Sunday. It was a social time, but I managed to avoid many of the Black Friday sales which is a high accomplishment for me! Onto Christmas!!
For Halloween, my office building had a pumpkin carving contest. At the last minute (like 10PM the night before), I decided to enter. They provided the pumpkin and carving kit which was super nice. This is actually my second attempt as my first was a gigantic failure. I drew the sketch freehand based on a photo on Google and then used that sketch as a stencil. Then, Husband couldn't tell what it was so I highlighted the sweater and dog ears in black marker. Just for kicks, I painted it all. The next morning, I added the zig zag. Transferring to work was the most difficult part. The pumpkin was still wet and fragile. So, I held it in my hands and got a little yellow all over everything. It's kid paint so it's all water soluble and will come out, but it was still messy.
Anyway, it was all worth it! I came in third. I came in after a patriotic, Washington DC pumpkin and Bernie Sanders. Despite your politics, Bernie was carved beautifully. I would have voted for that for first. I was happy with third. For my big win, I got a trophy which is kind of awesome and Wizards/Magic basketball tickets for next weekend with parking pass. I'm less excited about that, but we may actually go because why not?
October was, as always a busy month! The first weekend, I had book club. We read a book that was about a family that owned a vineyard so we went to a vineyard to discuss it. It was a rainy day, but it wasn't cold, and the wine flowed. It was a fun day with yummy snacks, delicious wine, and great friends!
The second weekend was a quiet one. A co-worker is expecting a baby in the beginning of next year so I offered her any baby items we were no longer using. It was great to help her fulfill her needs while also emptying out our apartment. The weekend was a much-needed quiet one.
The third weekend, we went to the pumpkin patch. It started out beautiful, but it turned cold and drizzly. The kids had a blast though. Captain hated being outside, hated everything. I got one good picture and a billion ones where he looks miserable. Little Miss had a blast on the slides, bouncy castle, playground. She loved being with her cousins. After the pumpkin patch, Little Miss and I went to the movies. It was nice to have some special Big Girl time. On Sunday, my sister and her fiance came over to watch football. I started preparations for Little Miss's birthday party. Little Miss had a playdate with a close friend. It was a good day.
The fourth weekend was Little Miss's birthday party! It was all about Big Hero 6, Little Miss's favorite movie of the moment. We had crafts and food based on the movie, and the kids watched the film. It was great.
Then, Halloween rounded out October. We went out to my parents' house. My dad was out of town. We stopped at my sister's house and picked up some candy. Captain was scared of their puppy. Then, we went to my mom's for dinner. After dinner, we went door to door. Brother-in-Law and his wife came with Nephew and their dog. Captain actually loved their dog. We didn't score a ton of candy but a good amount. Both kids got a little taste before we went home. Both were exhausted and slept on the way home and late into the next day. Captain was so good during his first real Halloween. He kept his costume on all night. Little Miss took hers off at the first opportunity. Onto November!
Let's see. We had a ridiculously busy May. The first weekend, we had our annual Kentucky Derby party which involved crazy cleaning and cooking. We had chicken parm, pasta, egg rolls, salads, a wide range of foods. Then, some stayed for the fight. It was a lot of fun. The next day, I met a friends for lunch which was always fun.
The second weekend of May, we hit up the elementary school's Fun Fair for a brief time before heading to our Nephew's first birthday party. It was crazy hot but a lot of fun. The next day was Mother's Day. We went to Sister's house for a Mother's Day brunch. We ate a ridiculous amount of delicious food. We celebrated the oldest Nephew's birthday as well.
The third weekend in May, I took the kids to the park. Little Miss met up with a friend there by chance and had a blast. Captain did not like the slide and couldn't really do much as he's not quite walking yet. Also, we got eaten up by mosquitoes which was unfortunate.
On Sunday, Little Miss had a playdate in the morning. So, I dropped her off before taking Captain to The Taste of Arlington. It was very hot, but he was a trooper. I gave him doughnuts and a lot of other tastes. I would have given him chili, but that was scalding hot so I was a good mama instead. Later, I picked up Little Miss, dropped Captain at home and took her to Taste of Arlington in the evening so she could play games and try some food. Lots of good food. I refused to stand in long lines which is why I like to go when it opens, but there were some great restaurants there. I felt the variety was better than in the past, but the lines are still obnoxious after 2PM.
The fourth week of the month, we hung out at Brother-in-Law and Sister-in-Law's pool with the In-laws. It was great. The weather was a bit cool, but the kids went in the pool anyway. We ate a lot and chatted. On Sunday, we went wedding dress shopping with Sister. We were all very successful. She chose a dress. The attendants chose dresses, and we have an idea of what to do for Little Miss. On Monday, we hit the driving range before going to my parents' pool. Captain walked around the baby pool for a long time, fighting sleep. Little Miss had a good time, but I think she missed someone to play with.
The last weekend in May, Little Miss and I woke early to clean up the school's courtyard. Every bug seemed to get a taste of me. After, we wanted to go to the pool, but we were too tired (read that as I was too tired). So, I took a nap and chose to do nothing instead.
On Sunday, Little Miss woke up sick so she stayed on the couch with Husband while she recovered. I took Captain to my parents' house so he could see my grandparents. They were tickled by him - as they should be. It was an exhausting month. June seems busy but not nearly as busy.
April was the beginning of a very busy time for us. If we get through to Memorial Day, we can tackle anything. The first weekend was Easter and the end of Spring Break. Little Miss had a great Spring Break. It started with a little bit of sickness, but she rallied and got to enjoy 2 days down in Williamsburg and Busch Gardens. The next day, she went to Mount Vernon which she has been asking to visit for months now. That night, we had dinner with friends of mine. Little Miss hit it off with her kids and asks about them constantly.
For the Saturday before Easter, we went over to Brother-in-Law and Sister-in-Law's for dinner. We had an early dinner and had a relaxing evening playing video games and watching the babies play. On Easter Sunday, we hung out at my parents' house for a bit. We had a relaxing dinner and I brought some cupcakes for dessert.
The second weekend of April was the Masters. We had hockey that morning and then went to my sister and future Brother-in-Law's for a housewarming party. My aunt and uncle were in town. My uncle had yet to meet the baby. It was a lot of fun. On Sunday, we (and a billion people) went to see the Cherry Blossoms in their peak. It was a beautiful, unseasonably warm day. Little Miss really had a blast though. Baby was less than impressed, but he was very well-behaved.
The third weekend in April was ridiculously hot. I went to the Nats/Phillies game for my friend's birthday. Then, we went to dinner and out on the town. I'm still recovering, I think. It was a blast though. That Sunday, Little Miss had a birthday party for one of her good friends.
The third weekend was the baby's birthday party. I'm in denial that he is 1. That will be a separate post. That Sunday, Little Miss had ANOTHER birthday party for a friend. Afterwards, Little Miss and I went to The Melting Pot for dinner together. I had a Living Social deal that expired so I took her as a treat. She was great at the restaurant and eating, but next time, I'm thinking we'll just do the chocolate.
We're not an Irish family or a family that owns a lot of green, but I dug some out. Little Miss thinks her shirt is too blue/green, but it's the best we could do. She has a necklace, a bracelet, and a crown. I think she's covered. Baby has his shirt and bib. Little Miss protests his bib because he's not Irish so I reminded her that she isn't either.
Then, Little Miss begged for a selfie so we made that happen. She also told me I didn't have enough green on and pinched me. She's a strict one with the rules.
February was a good month and, as always, flew. Good golly, February went by quickly. The first weekend, Little Miss and I did Bingo Night at her school on Friday. She won a game and had great fun with a couple of classmates. The next night, she had a sleepover at the In-Laws' apartment with her cousin.
The second weekend was Presidents' Day weekend. My office closed early on Friday so we took advantage of that and went to Maryland. My aunt, cousin and his girlfriend were there and got to meet the baby for the first time. The kids were showered with gifts. The weather was bitter, bitter cold though. We stayed in and played on Saturday, and the couples went out to dinner on Valentine's Day, but we were stir-crazy by Saturday. Sister, Brother-in-Law (to be), Nephew, Cousin and his girlfriend and Husband, Little Miss and I all went bowling and to the arcade. It was a lot of fun and nice to get out.
Surprisingly, Baby was really great in the snow. He really liked it and giggled even though he's kind of, well, a baby in the cold usually. It must have felt funny to sit in it. He also enjoys wearing his snow suit.
The third weekend of the month, Husband's friend came over. It was cold out so we were pretty happy just staying inside and eating our way through the cold weather. That's pretty much what we did the next day, too.
I'd like to say we had a blast the last weekend of the month, but it was cold again, and we did nothing. On Friday, Little Miss and I went to Family Gym Night where Little Miss wore herself playing basketball, jazzercise and scooter hockey. It was tiring to watch her. Unfortunately, I had plans, but we wisely cancelled due to the ice storm we received. So, we kind of just stayed in and played games. Little Miss did her homework. All in all, it was a nice, quiet weekend.
